Zillie’s Yeast Rolls

Ingredients

  • 1 cup boiling water
  • 1 cup white sugar
  • 1 cup shortening
  • 2 packages yeast
  • 1 cup warm water
  • 2 tsp. salt
  • 2 eggs slightly beaten
  • 6 cups flour
  • butter melted

Directions

Mix boiling water, sugar, and shortening in a large bread bowl. In a measuring cup mix yeast and warm water. Pour the yeast mixture into the first mixtue. Mix the beaten eggs and salt into the combined mixture. Add flour and mix well into a soft dough.

Cover bowl with a dish town and put in a warm place. After the dough has risen punch it down.

To make rolls, lightly grease muffin tins, form, and place two 1″ diameter balls into each hole of the pan. Cover and let rise until doubled. Bake rolls in a 400 degree oven for 10 to 12 minutes. Brush each roll with melted butter.

Recipe makes 2-3 dozen rolls. The dough can be left in the refrigerator for several days and used as needed. These rolls are always a special treat for family holidays!
